In 1994, Mike and Amanda Bristol settled comfortably in the lap of Pikes Peak and began hand-brewing distinctive, award-winning craft beer for the people of Colorado Springs. Today, our beers are available on draft and in six packs across the state, and it’s all brewed right here at Ivywild School. From Laughing Lab Scottish Ale to favorites like Compass IPA, Beehive Honey Wheat, and Mango Pirate Golden Sour, the quality and flavor of the beer drive everything at Bristol.
We opened the Bristol Pub in 2013 because we wanted to create a place with a laid back but super-friendly vibe that would make people want to get off the couch and gather with friends to enjoy good conversation over a Bristol beer and a bite. Our pub offers a front row seat to our wholesale brewing operation, a classic shuffleboard table, a large, sunny patio, and fresh pints of beer straight from the brewery taps. You’ll find the Bristol Pub is ground zero for every beer we currently have available–including one-off releases you can’t find anywhere else.
Just downstairs from the Pub, the Barrel Room offers a more intimate, beer-focused atmosphere with just 5 tables plus standing room in the cozy space formerly devoted to our barrel aging program. Three large overhead doors allow for spilling out into the Beer Garden when the weather is nice, and longtime Bristol folk will recognize the original handmade mahogany bar and glass block from our old Tejon Street tasting room.
When the skies are blue and the nights are balmy, we like to take the vibe outside. Grab a beer from the Barrel Room and pull up an adirondack chair, park yourself at a picnic table, or try our funky, soon-to-be-famous pallet furniture. Cornhole tournaments encouraged.
