Bristol Brewing has been a part of the Colorado Springs fabric since 1994 when Mike and Amanda Bristol decided to start hand-brewing fresh, award-winning ales for the people of Colorado. With five flagship beers plus seasonals and specialty beers, quality and flavor drive everything at Bristol.
Bristol is also driven by giving back to the community. In fact, it is by design that Bristol’s beers are still only available in Colorado. They believe in local breweries and their ability to build community, which is one of the reasons Bristol Brewing decided to revitalize and move in to the old Ivywild School. That community mindfulness is the reason behind their Community Ale program as well. They donate 100% of the proceeds to support local causes that contribute to the quality of life in Colorado Springs. After all, the Bristols live here too!
The expanded space is everything the former tasting room was and more – literally – they picked it up and moved it over, along with a 360-degree bar that overlooks the brewhouse and fermentation room. The bar also includes a special growler station for ½ gallon growlers to go, filled at the brewery taps.
Speaking of those taps, you can expect refreshing pints of all of Bristol’s five flagship beers – Laughing Lab Scottish Ale, Beehive Honey Wheat, Mass Transit Ale, Red Rocket Pale Ale and Compass India Pale Ale, along with rotating seasonals and specialty beers. Of course you’ll still find the ever popular pretzels in dog bowls, in addition to a small menu featuring ingredients made or grown at Ivywild.
So grab a pint and a bite to eat – there’s plenty of space inside and outside to sit back and relax. Bask in the view of Pikes Peak on the large patio or there’s ample seating inside. The Wildcat Room, adjacent to the Pub, can be opened up to accommodate larger crowds. The old elephant doors from the Cheyenne Mountain Zoo close off the space for private functions. The Barrel Room, located at the main entry level, can also be rented out for special events.
