What the heck is Detroit Style pizza?
Detroit-style pizza is a thick, rectangular-cut pizza with a crunchy, fried bottom layer of crust. The classic crunch comes from a frico crust – the lacy, crispy, browned cheese that forms where the cheese meets the side of the pan.
We’d chosen to follow the traditions set in Detroit in the 1940’s using baked metal pans (not borrowed from local automotive plants like in the early days), made with traditional brick cheese and topped with our house red sauce.
